A laid course is sailed a leg at a time, so weather and pirates still get their say. Nothing is ever greyed out; an order that cannot be obeyed is refused in the log, with the reason.
The crew eat and drink every day and are paid every month. Food, water and lumber ride in the same hold as the cargo, so victualling for a long leg costs you the profit you could have carried instead. Sail without either and they start to die.
